Salmon fillets baked in the oven with a pesto topping

Ingredients

  • 120g piece of salmon fillet
  • 1 tbsp pesto
  • 1 tbsp lemon pepper crust topping (a mixture of breadcrumbs, lemon rind and black pepper that comes in a tub, sold in the supermarket)

Method

Heat oven to 200 degrees C Smear the salmon with pesto and sprinkle on the breadcrumbs, place on a baking tray and bake for 15 mins in the oven.
