  • 4 large flat cap or portabello mushrooms, roughly chopped
  • 100g baby spinach
  • 100g feta cheese
  • a good grinding of nutmeg
  • 4 large eggs
  • 284 ml double cream
  • a good grinding of salt & freshly ground black pepper
