  • 200g cooked beetroot, cut into baby beetroot size chunks
  • 2 tsp olive oil
  • 30g walnut halves or pieces
  • 1 tsp honey
  • 1/2 tsp ground cinnamon
  • 1 slice wholewheat toast
  • 2 cabecou goats cheese
  • 100g rocket or baby salad leaves
  • For the dressing
  • 1 tblsp olive oil
  • 1/2 tblsp balsamic vinegar
  • 1/2 tbslp walnut vinegar
  • sea salt and freshly ground black pepper
  • 1/2 clove garlic, crushed
  • 1/2 tsp grainy mustard
